Achari Sabzi ( Pickle masala Veges)



  • Green Chillies 10 to 12
  • Potatoes 2 medium cut in sticks
  • Baby carrots 5

For Baghar:

  • Cumin seed 1tsp
  • Aniseed 1tsp
  • Fenugreek seeds pinch
  • Mustard seeds pinch
  • Onion seeds pinch
  • Curry leaves a few

For masala:

  • Cumin seeds 1tsp
  • Coriander seeds 1tsp
  • Aniseed 1tsp

All coarsely grounded

  • Red chilli powder to taste
  • Turmeric powder 1/2 tsp
  • Onion chopped 1 medium
  • Tamarind pulp 4tbsp
  • Chopped garlic 2 to 4
  • Salt to taste
  • Crushed red chilli to taste


Take a wok and pour in 4tbsp of oil then add all the baghar ingredients and let it fry for a bit then add all the veges and crushed garlic and toss on high heat for few minutes, take them out in a plate. In same wok add chopped onions and saute until light golden then add tamarind pulp add salt red chilli powder the coarsely grounded masala and crushed red chilli, mix everything well then at the end add veges and add little water, let it simmer for 5 minutes, serve hot with boiled rice or rotis.
