Ingredients:

Mocha Streusel Cake:

  • 3 Cups all purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup butter,softened
  • 2 cups sugar
  • 3 eggs
  • 1 tbsp vanilla
  • 1 cup milk
  • 1/2 cup sour cream
  • 1/2 cup cold coffee

For Streusel:

  • 3/4 cup brown sugar
  • 1/4 cup flour
  • Pinch salt
  • 1 tsp cinnamon powder
  • Pinch of instant coffee powder
  • 3/4 cup walnuts
  • 1/3 cup chocolate chips
  • 1/4 cup melted butter
  • 1 tsp vanilla

Method:

For Streusel:

Add brown sugar, flour, salt, cinnamon, cocoa powder, instant coffee powder, walnuts and chocolate chip to a bowl, stir, add melted butter and set aside.

For Cake:

Preheat oven to 350 degrees.

Grease a bundt pan or a large rectangular pan (9/13 inches) and dust with flour.

Combine flour, baking powder, baking soda and salt, set aside.

Cream butter and sugar until light and fluffy, add egg one by one beating well after each addition, add vanilla.

In a bowl combine coffee, sour cream and milk. Add this mix alternating with dry mix in two additions, beat all well until combined. Scrape the sides and pour in half of the mixture into prepared pan then spread half of streusel evenly, pour remaining cake batter and spread left streusel evenly.

Place the pan in preheated oven on a medium rack and bake for about an hour and 15 minutes or until done, check with a skewer, it should come out clean.

Place the cake on a wire rack and cool completely, gently remove from the pan and serve with whip cream (optional).
